Veggie Bites by Andrew Balogh

Ingredients
1/3 cup margarine or butter, melted 2 cups fresh vegetables (broccoli, flowerettes, or caulifowerets,1/4 in carrot slices, 1/2 in zucchini slices,1/2 in strips green or red pepper)
1 Egg
2 tsps water
1/2 cup flour
1/2 tsp salt

Directions: Heat oven to 450F. Brush bottom of rectangular pan, 13 x 9 x 2, with about 1 tblsp melted margarine. Beat egg and water with a fork in a shallow dish. Mix flour and salt in another shallow dish.

Dip about 1/4 of the vegetables into egg mixture. Remove 1 vegetable piece at a time with a slotted spoon, fork or hands; roll veggies in flour mixture to coat. Place in baking pan, repeat with remaining vegetables. Pour remaining margarine carefully over each vegetable piece and into pan. Bake uncovered, turning once until vegetables are crisp, tender and coating is golden brown, 10 -12 minutes; drain. Sprinkle lightly with grated Parmesan cheese if you like.

Makes 2 cups veggie bites.
