Deserts:
Schneenockerln (Snow Dumplings) - As Prepared by Frau Theresia Seitz
Frau Seitz with her grand daughter, Nikki Seitz.
| 1 Liter Milk | 1 Vanilla Stick | 4 Eggs |
| 1 Pkg of Vanilla Sugar | 4 Tbs. of Sugar | 1 Tbs. Corn Starch |
Bring the milk and vanilla stick to a boil in an open saucepan. Beat the egg whites and vanilla sugar until they form stiff peaks. Use a tablespoon to scoop tiny mounds of egg white mixture into the boiling milk. When the dumplings enlarge and come to the top, take them out and put them in a bowl. In another bowl, beat the egg yolks and the sugar into the foamy mixture; add cornstarch and mix well. Over low heat, add the hot milk slowly to the egg mixture, stirring constantly. When the mixture begins to thicken, remove from heat and keep stirring until it is lukewarm. Pour mixture into four dessert bowls and float the dumplings on top. Yields four portions.
